Do you make raw milk cheeses?
Not yet. Raw milk cheeses must be aged for 60 days to be sold legally in British Columbia, and must be clearly separated from pasteurized cheeses. All fresh cheeses must be pasteurized.
Because we are very small, with limited storage and ripening facilities, we cannot yet handle making raw milk cheeses.
