Goat's Pride Recipe of the Month |

This month we are featuring a "Pasta Primavera"
Now that the weather is cooler, what better comfort food than a plate of delicious, steamy pasta with the bright colours of the fall vegetables stirred in?

Ingredients:
8 oz Goat's Pride Chevre, Garlic & Herb or Black Pepper
1 c Goat's Pride Whole Milk
1/4 tsp salt
1/4 tsp pepper
1 tsp dried oregano
2 c mixed fresh vegetables cut into small pieces
(Broccoli, red & green peppers, carrots, corn, cauliflower)
2 tbsp fresh basil, chopped
1 - 6 oz package of whole wheat pasta, cooked according to directions
1. Lightly steam the vegetables and keep warm.
2. In a large skillet, gently warm the chevre over low heat adding the milk to make a smooth sauce.
3. Add the salt, pepper & oregano.
4. Stir in the vegetables and toss with the cooked pasta to thoroughly coat.
5. Garnish with the fresh basil
Serves 4 as a main dish or 6 - 8 as a side dish. |
